Description

This frittata is quick, easy and full of vegetables.

Method

Step 1 of 7

Heat oil in quiche dish over medium-high heat.

Step 2 of 7

Add brussels sprouts and cook, stirring occasionally for 2 minutes.

Step 3 of 7

Add frozen peas and cook, stirring occasionally for 2 minutes.

Step 4 of 7

Add cherry tomatoes and parsley and cook, stirring occasionally for 1 minute. Remove from heat.

Step 5 of 7

Whisk eggs, season with salt and pepper, and pour over vegetables in quiche dish.

Step 6 of 7

Grate cheese over the top and place in oven for 20 minutes.

Step 7 of 7

Remove from oven, cut into 4 portions and serve.
