  • 2 sourdough (or any firm bread, bread rolls or half a loaf)
  • 1 cup baby spinach leaves (or other cooked veges)
  • 300grams cooked meatballs (approx 15-20 or other cooked meats)
  • 1 cup shredded cheddar cheese
  • 1/4 red onion, diced finely
  • 8 eggs
  • 2 cup milk
  • 1tablespoons mustard (optional)
  • 2tablespoons parmesan cheese (optional)

Description

Great way to use up any firm leftover/stale bread. You can vary the other ingredients to suit your tastes and double the amount to feed a crowd.
Instruction tip
The basic stratum recipe of layered bread, cheese, eggs & milk can be used with any number of other ingredients. With or without a meat, any other veggies, bacon and tomato for breakfast. Also an easy dish for kids.

Method

Step 1 of 10

Gather ingredients and cut or tear bread into 4 cm cubes.

Step 2 of 10

Grease a 28x19cm baking dish and scatter half the bread cubes around.

Step 3 of 10

Place the meatballs, spinach leaves, red onion and half the cheddar cheese in and on the bread cubes.

Step 4 of 10

Put the remaining bread on top and scatter over the rest of the cheese.

Step 5 of 10

Whisk the 8 eggs with the 2 cups of milk and the mustard if using.

Step 6 of 10

Pour the egg mix evenly over the baking dish and press the bread down gently. leave 10 mins. At this stage you can cover and leave the strata to rest in the fridge to allow the bread to soak up the egg mix. The longer it soaks the better it is, it can even sit overnight to be baked as a breakfast dish.

When you are ready to bake sprinkle over the parmesan if using.

Step 8 of 10

Bake at 200°C for approx. 40 mins. It is ready when the cheese is melted and browned and the center is set. I also baked some cherry tomatoes.

Step 9 of 10

Allow to sit for a little before serving.

Step 10 of 10

Served with the roasted cherry tomatoes and a green pea puree.
