  • 1 cup rice milk
  • 1 1/2 cup lactose-free cheese, grated
  • 2tablespoons dairy-free spread

Method

Step 1 of 3

Preheat oven to 200°C. Grease a 6-cup baking dish. Divide broccoli and cauliflower into florets of a similar size. Steam for 5 minutes until just tender. Drain and arrange in baking dish.

Step 2 of 3

In a small saucepan, melt spread over medium heat. Add flour and stir well to combine. Cook for 1 minute. Remove from heat and gradually add milk, whisking until smooth. Return to heat and cook, stirring constantly, for 5 minutes until thickened. Season to taste.

Step 3 of 3

Stir in 1 cup of the cheese. Pour over vegetables. Sprinkle with remaining cheese. Bake for 10 minutes until golden. Season with pepper and serve.
