  • 1tablespoons olive oil
  • 1 onion, chopped
  • 340grams can corned beef
  • 2 tomatoes, chopped
  • 1 dash Worcestershire sauce
  • 2tablespoons butter
  • 4 eggs

Method

Step 1 of 6

Cook the potatoes in boiling water for 12-14 minutes, until tender.

Step 2 of 6

Meanwhile, heat the oil in a large frying pan, add the onion and cook for 4-5 minutes.

Add the corned beef to the pan and cook for a further 2-3 minutes.

Step 4 of 6

Drain the potatoes and add them to the pan, cooking and lightly crushing them for 1-2 minutes. Stir in the tomatoes and Worcestershire sauce and cook for a further 3-4 minutes.

Meanwhile, heat the butter or oil in another frying pan and fry the eggs to your liking.

Step 6 of 6

Serve the corned beef hash topped with a fried egg.
