  • 1 cup milk
  • sour cream (and snipped chives, to serve)
  • 1 pinch ground cinnamon
  • 1tablespoons dijon mustard
  • 1 cup spinach
  • 1tablespoons olive oil
  • 4 eggs
  • 100grams pancetta, diced
  • 1 cup cheese, shredded
  • 3 bread rolls, torn into pieces

Method

Step 1 of 5

Preheat oven to 180ºC. Grease a cake tin with half the oil and line with baking paper.

Step 2 of 5

Heat the remaining oil in a small pan. Add the pancetta and cinnamon and cook until crisp, about two minutes.

Whisk together the milk, eggs and mustard, and season with salt and pepper.

Step 4 of 5

Add the torn bread rolls to the bottom of the cake tin, top with spinach and pancetta and pour over egg mixture.

Step 5 of 5

Top with cheese and leave to soak for five minutes before baking in the oven for 25 minutes or until cheese is browned. Serve with sour cream and chives.
