Description
Baking fish in foil is a simple way to ensure it is perfectly steamed with gentle lemon and fennel flavour.
Method
Step 1 of 3
Pre-heat the oven to 180°C. Cut 4 large rectangles of foil and parchment paper and place the parchment on the foil.
Step 2 of 3
Place sliced onions, fennel and lemon on each rectangle of parchment, top with trout fillets, capers, dill, a drizzle of olive oil and lemon juice. Wrap up to form sealed parcels with a bit of room inside for steam.
Step 3 of 3
Place the parcels on baking trays and bake for 12-14 minutes. Serve the parcels on plates to open at the table.
