  • 1 medium lemon, juice and zest

This quick and summery salad is perfect for warm days.

Method

Step 1 of 3

Cook the potatoes for 15 minutes in a pot of boiling water, drain and set aside.

Step 2 of 3

Mix the lemon juice and zest and chopped fresh dill and chives into the Greek yoghurt.

Step 3 of 3

Toss the potatoes, watercress, spring onions, cucumber and smoked trout in the dressing and serve.
