  • 1 large lemon, 1/2 juiced, 1/2 in wedges
  • 2tablespoons creme fraiche, reduced fat

Description

This super simple smoked trout dish makes a speedy and nutritious dinner.

Method

Step 1 of 3

Heat the oil in a large pan on medium heat and cook the leeks for 5 minutes. Add the kale and cook for 2 minutes. Add the lentils and warm through.

Step 2 of 3

Remove from the heat and stir through the creme fraiche, lemon juice and mustard.

Step 3 of 3

Serve with smoked trout on top and a lemon wedge on the side.
