  • 2tablespoons plain flour
  • 60grams butter, melted (save 40g for later)
  • 1 cup milk
  • 125grams vintage cheddar, grated
  • 3 eggs, separated
  • 2tablespoons basil, finely chopped
  • 1/4 cup dried breadcrumbs

Method

Step 1 of 4

Preheat oven to 180°C. Brush 4 x 1-cup soufflé dishes with melted butter and coat with breadcrumbs.

Step 2 of 4

Melt extra butter in a small saucepan. Add flour and whisk until well combined and bubbly. Remove saucepan from heat and slowly add milk, whisking constantly. Return to heat and whisk until a smooth thick sauce forms and comes to the boil. Reduce heat to low and cook for 1 minute. Remove from heat.

Add cheese, herbs and egg yolks, stirring until cheese has melted.

Step 4 of 4

Using electric beaters, beat egg whites and a pinch of salt in a clean bowl until stiff peaks form. Using a large metal spoon (see tip), fold 1/3 of egg white mixture into cheese sauce. Add remaining egg white and fold through mixture. Spoon into prepared dishes. Bake for 20 minutes or until golden and risen. Serve immediately.
