  • 1/2 cup plain flour
  • green beans, blanched (to serve)
  • mini cucumbers (to serve)
  • 3 medium eggplants
  • 1 medium onion, chopped
  • radishes (to serve)
  • bread (to serve)
  • 1/4teaspoons allspice
  • 1L olive oil (for frying)
  • 2 eggs, hard-boiled, peeled
  • 2 garlic cloves, crushed
  • 1 cup walnuts

Method

Step 1 of 5

Slice eggplants into 3cm-thick slices. Place in a colander over a large bowl. Sprinkle with salt, and set aside for 20 minutes to drain. Rinse lightly and pat dry with paper towel. Dust with seasoned flour.

Add enough oil to a large frying pan until 2cm deep. Heat over medium-high heat.

Cook eggplant in a single layer for 3-4 minutes, turning over halfway until golden. Remove and drain on paper towel. Cool.

Pour off all but 1 tbs of the oil. Add onion and garlic to pan and cook gently for 8-10 minutes or until golden and soft. Drain well.

Step 5 of 5

Place eggplant, onion mixture and walnuts into a food processor. Process until finely chopped. Add eggs and allspice and process until smooth. Season. Serve pâté with bread, radishes, mini cucumbers (qukes) and blanched green beans.
