  • 2 cup fresh broad beans (shelled taken from pod)
  • 2 clove garlic, peeled
  • 2 lemons
  • 1teaspoons cumin powder (optional)
  • 1tablespoons olive oil
  • 2 few sprigs of fresh mint or coriander
  • salt and pepper (or chilli flake for seasoning)

Description

With broad bean season going crazy I have plenty, so decided to make a quick easy dip of sorts which came out very nice indeed.

Method

Step 1 of 4

Shell the broad bean pods. Once you have about 2 cups worth put beans in boiling water for 5 minutes, remove beans into colander and run cold water to retain that nice green colour. You can use beans straight up like that for added fibre or easily peel off the bean skin off to give a smoother texture dip result.

Step 2 of 4

Rind the lemons then juice them. Peel the garlic cloves. Take mint leaves off stalks. Get everything ready to add to processor.

Step 3 of 4

Place beans, garlic, rind, juice, mint, cumin, olive oil into food processor. Process until smooth or to your texture consistency liking, add seasonings to suit. All done ! Serve as a dip or spread etc. Easy Peasy!

Step 4 of 4

I made a few batches omitting some ingredients such as the cumin powder and mint, coriander and each has its own special taste flavour.
