- 250grams punnet cherry tomatoes
- 1 medium onion (red or white)
- 5milliliter olive oil spray
- 3 cloves garlic
- 1/4teaspoons black pepper, freshly ground
- 2teaspoons mixed dried herbs (or fresh basil)
- 1tablespoons parmesan cheese (to serve)

Description
Quick, easy and full of veggies. Serves 4 as a side dish.
Method
Step 1 of 4
Prepare the vegetables: Chop the onion and garlic. Cut each zucchini in half lengthwise and then cut across into thick half moons
Step 2 of 4
Over medium heat, spray pan and cook onions, while stirring, until soft but don't brown.
Step 3 of 4
Add zucchinis, cherry tomatoes, garlic, herbs and pepper to onions in the pan and mix. Cook over medium heat while gently stirring from time to time for about 5-6 minutes. The tomatoes should start to blister and the zucchini should cook through but don't let the zucchini get too soft. You want it cooked but firm.
Step 4 of 4
If using fresh basil instead of dried herbs, add just before serving. Grate or shave some parmesan cheese over the top to serve.
