- 1 lemon, cut into wedges (to serve)
- 1 onion, finely chopped
- 2 cloves garlic, grated or finely chopped
- 1 green capsicums, deseeded and finely chopped
- 450grams clams, prepared
- 1 handful flat-leaf parsley, finely chopped

Method
Step 1 of 2
Heat the oil in a large frying pan over a medium heat. Add the onion and a pinch of salt, and sweat for about 5 minutes until soft and translucent. Add the garlic and capsicums, and gently sweat until the capsicums begin to soften. Increase the heat to high, and add the wine. Cook for a couple of minutes until the alcohol has evaporated.

Add the clams, shaking the pan occasionally, and cook for 5-6 minutes until the clams open (discard any that remain shut). Add the parsley, and stir to combine. Serve piping hot with fresh crusty bread to mop up the juices and some lemon wedges.
