- 2 stalks lemongrass, outer leaves discarded
- 3tablespoons Thai basil leaves, chopped (save 6 extra whole leaves)
- 1teaspoons fresh root ginger, finely grated
- 1 whole red chilli, deseeded and finely chopped
- 1tablespoons honey
- 3tablespoons soy sauce
- 2tablespoons fish sauce
- 6tablespoons lime, juice only

Description
This salsa transforms grilled fish or skewers of barbecued white meat into an Asian delicacy.
Method
Step 1 of 4
Slice off the tops of the lemongrass stalks and discard them. Bash down on the bulb ends with the side of a large knife, or pound using a kitchen mallet. Chop very finely and place in a bowl.
Step 2 of 4
Add the basil, ginger, and chilli. Pour in the honey or sugar, soy sauce, fish sauce, and lime juice, and stir well.
Step 3 of 4
Cover and chill for at least 1 hour to give the flavours time to amalgamate and develop.
Step 4 of 4
Just before serving, stir in the reserved whole basil leaves, pressing them slightly to release their fragrance.
