Method

Step 1 of 3

Fry pancetta in a non-stick pan for 1-2 minutes each side until crisp. Remove from pan, cool and break into small pieces.

Step 2 of 3

Cut a slit in the side of each date and squeeze ends towards the centre to open slightly. Remove stone.

Step 3 of 3

Cut cheese into small pieces and place into slits. Top with a piece of pancetta. Serve on a lavosh cracker.
