  • 130grams plain flour
  • 2tablespoons canola oil, plus extra for deep frying
  • 200grams potatoes, peeled and sliced into cubes
  • 5tablespoons tamarind paste
  • 2tablespoons caster sugar
  • 100grams chickpeas, tinned, drained
  • 1 medium red onion, peeled and diced
  • 200grams tomatoes, diced
  • 1/2 bunch coriander, fresh, chopped
  • 5tablespoons Greek yoghurt
  • 75grams Bombay mix, spicy
  • 40grams dates, pitted and chopped

Description

Paapdis are crisp little fried discs traditionally topped with a spiced potato and chickpea mix for a delicious Indian snack or entree.
Instruction tip
Serve with mint and coriander chutney on the side.

Method

Step 1 of 4

Add the flour to a large bowl and mix in the canola oil with your hands until the mix resembles breadcrumbs. Add 60ml of water gradually, mixing to form a thick dough. Lightly oil your hands and knead the dough for 3-4 minutes until smooth and pliable. Lightly flour a work surface, roll out the dough and cut out into small rounds.

Heat oil in a large, deep pan. Drop the dough rounds into the oil, working in batches. Deep fry for 3-4 minutes until crisp and golden. Drain on kitchen paper and set aside to cool.

Place the potatoes in a large pan of boiling water and cook for 10 minutes and drain well. Add the tamarind paste and caster sugar to a blender with 2 tablespoons of water and blitz to a sauce consistency, adding more water if necessary.

Toss the potato in a bowl with the chickpeas, red onion, tomatoes and coriander. Pile the mix on to each paapdi. Drizzle with tamarind chutney and yoghurt and sprinkle Bombay mix and chopped dates on top.
