  • 1tablespoons butter
  • 4 spring onions, sliced
  • 4 heads little gem lettuce, chopped
  • 3 1/4 cup vegetable stock, hot, made with 1 stock cube
  • 2 large avocados, peeled and diced
  • 1 medium lemon, juiced
  • 2tablespoons creme fraiche
  • 1tablespoons coriander, fresh, chopped

Description

Creamy avocado makes this simple lettuce soup rich and filling, delicious served chilled with crusty bread.

Method

Step 1 of 3

Heat the butter in a large pan on medium heat and cook the spring onions for 3-4 minutes. Add the lettuce and cook for 5 minutes, until wilted.

Step 2 of 3

Add to a blender, pour in the vegetable stock, avocados and lemon juice and blitz until smooth with an immersion blender.

Step 3 of 3

Pass the soup through a fine sieve. Serve chilled or at room temperature with a dollop of creme fraiche and fresh coriander on top.
