Description

Traditional Irish colcannon is the ultimate comfort food, mashed potatoes cooked with cabbage, butter and milk.

Method

Step 1 of 3

Place the potatoes in a large saucepan of cold water and bring to the boil. Cook for 10-12 minutes, drain and steam over a pot of boiling water for 5 minutes, or until tender.

Step 2 of 3

Cook the cabbage in a pan of boiling water for 6-7 minutes, until tender. Drain well, add knob of butter and season.

Step 3 of 3

Bring the milk to the boil in a pan and add to the potatoes. Add the rest of the butter and mash well. Stir through the cabbage, season and serve.
