  • 300grams sweetcorn, drained
  • 400grams chickpeas, drained
  • 50grams panko bread crumbs
  • 2 stalks scallions, sliced
  • 1tablespoons chilli flakes
  • 3tablespoons flour
  • 2tablespoons canola oil
  • 1 pinch salt
  • 1 pinch cracked black pepper
  • 4 medium brioche buns, sliced in half
  • 4tablespoons BBQ sauce
  • 80grams rocket, washed and drained

Description

These earthy and chunky burgers are lightly spiced with smoky flavours.

Method

Step 1 of 6

Place all the ingredients into a food processor apart from the oil, rocket, sauce and buns.

Step 2 of 6

Blend for a few seconds to keep some rough texture.

Step 3 of 6

Remove and divide into 4 patties and tightly pack together.

Step 4 of 6

Heat up a pan to a medium heat and then add the oil.

Step 5 of 6

Fry the burgers for 10 minutes and then flip over and fry for a further 10 minutes.

Step 6 of 6

Toast the buns and then serve with the burgers, sauce and rocket.
