These savoury and cheesy stuffed mushrooms make a delicious light lunch option.

Method

Step 1 of 2

Heat a drizzle of oil in a large pan and cook the leeks for 6 minutes until softened. Place the mushrooms on a baking tray and pre-heat the grill to high.

Step 2 of 2

Mix the ricotta, parmesan and leeks in a bowl and divide between the mushrooms. Grill for 8-10 minutes until golden and bubbling.
