  • 1 head white cabbage, sliced into discs
  • 2tablespoons olive oil
  • 2 cloves garlic, peeled and minced
  • 70grams pesto
  • 1 medium lemon, juice and zest
  • 1/3 cup white wine
  • 60grams parmesan, grated

Description

These roasted cabbage steaks with pesto, lemon and parmesan can be a delicious meat-free entree or side dish.

Method

Step 1 of 2

Pre-heat the oven to 180°C/160°C fan-forced. Place the cabbage steaks in a roasting tin and brush with oil and garlic.

Step 2 of 2

Spread pesto on top of each, sprinkle with lemon zest and pour the wine into the roasting tin. Roast for 30 minutes, top with parmesan and roast for 5 minutes.
