  • 2 red onions, peeled and chopped into thin wedges
  • 1teaspoons oregano
  • 350grams puff pastry, ready rolled
  • 150grams goats cheese, log, sliced
  • 1 egg

Description

Creamy goats cheese, sweet capsicums and crisp puff pastry work perfectly together in this simple tart.

Method

Step 1 of 4

Pre-heat the grill to high. Grill the capsicums for 8 minutes, turning frequently, until blackened. Place the capsicum in a large bowl, cover with clingfilm and set aside for 20 minutes. Peel away the skin, discard and slice into strips.

Step 2 of 4

Heat half of the oil in a large, deep, non-stick pan on medium heat and cook the onions for 8-10 minutes. Add the capsicum and oregano and cook for 5 minutes.

Step 3 of 4

Pre-heat the oven to 180°C. Unroll the pastry and place on a lightly oiled baking sheet. Cut a border of 2cm and pile the onion and capsicum mix in the middle. Top with slices of goats cheese.

Step 4 of 4

Brush the edges with beaten egg, drizzle with oil and bake for 15 minutes until puffy and golden.
