  • 200grams puff pastry, sheet, ready rolled

Description

Creamy ricotta and earthy mushrooms make a rich filling for this simple puff pastry tart.

Method

Step 1 of 3

Pre-heat the oven to 180°C. Heat the oil in a large pan on medium high heat and cook the mushrooms for 8 minutes. Add the spinach and cook for 1-2 minutes to wilt. Stir in the garlic, nutmeg and thyme and cook for 1 minute.

Step 2 of 3

Place the ricotta in a bowl and stir in the mushroom and spinach mix. Place the puff pastry sheet on a lined baking sheet and score a border around the edge.

Step 3 of 3

Spoon the ricotta mixture inside the border and spread evenly. Brush the border with milk and bake for 15 minutes, until golden. Scatter with rocket and serve.
