  • 1 small zucchini, grated
  • 1teaspoons canola oil
  • 1 medium white onion, peeled and diced
  • 2 cloves garlic, peeled and diced
  • 1 pinch salt
  • 1 pinch pepper
  • 300grams vegan pastry, store bought and chilled
  • 80grams feta, grated
  • 1tablespoons chives, chopped

Description

These little tarts are crispy on the outside with a delightfully creamy and moist filling.

Method

Step 1 of 6

Pre-heat the oven to 180°C.

Step 2 of 6

Heat up a pan to a medium heat with the canola oil and fry the zucchini, onions and garlic for 6 minutes while tossing.

Step 3 of 6

Roll out your chilled pastry and cut into 4 squares. Roll up the edges of the squares to create a small dip in the centre for your filling.

Step 4 of 6

Transfer the fried vegetables into the centre of each pastry and cover with the feta.

Step 5 of 6

Bake in the oven for 15 minutes or until the pastry is nicely browned.

Step 6 of 6

Serve with chives to garnish and seasoning to taste.
