  • 1teaspoons dry yeast, fast action
  • 1teaspoons caster sugar
  • 2 1/2tablespoons olive oil
  • 1 egg, beaten
  • 1teaspoons sea salt
  • 1 medium onion, finely sliced
  • 1 large red capsicum
  • 1 medium zucchini, thinly sliced
  • 75grams feta, crumbled

Description

Capsicums, zucchini and red onions make a delicious filling for these feta topped Turkish pides.

Method

Step 1 of 5

Tip the flour, sugar, yeast and salt into a large bowl and stir to combine. Add 80ml of warm water and 2 tablespoons of oil and mix to combine. Tip on to a lightly floured work surface and knead for 5 minutes until smooth and springy.

Step 2 of 5

Place in an oiled bowl and cover with a damp towel. Set aside to rise in a warm place for 1 hour.

Step 3 of 5

Add the remaining oil to a large pan on medium heat and cook the onions for 5 minutes. Add the capsicums and zucchini and cook for 5-7 minutes until tender.

Step 4 of 5

Pre-heat the oven to 180°C. Tip the dough on to a floured work surface and cut into 4 pieces. Roll each piece into an oval shape.

Step 5 of 5

Place the dough ovals on a lined baking tray and spoon the vegetable mix onto each, sprinkling a layer of crumbled feta on top. Leave a border around the edges and roll up to form a crust. Brush the edges with beaten egg and bake for 10-15 minutes until golden and crisp.
