- 1teaspoons dry yeast, fast action
- 1teaspoons caster sugar
- 2 1/2tablespoons olive oil
- 1 large egg, beaten
- 1teaspoons sea salt
- 1 medium onion, finely sliced
- 250grams chestnut mushrooms
- 70grams goats cheese, soft
- 1teaspoons thyme, dried

Description
These cheesy mushroom Turkish pides are fun to make and are delicious served with a salad for lunch.
Method
Step 1 of 5
Tip the flour, sugar, yeast and salt into a large bowl and stir to combine. Add 80ml of warm water and 2 tbs of oil and mix to combine. Tip on to a lightly floured work surface and knead for 5 minutes until smooth and springy.

Place in an oiled bowl and cover with a damp towel. Set aside to rise in a warm place for 1 hour.

Add the remaining oil to a large pan on medium heat and cook the onions for 5 minutes. Add the mushrooms and thyme cook for 5 minutes.
Step 4 of 5
Pre-heat the oven to 180°C. Tip the dough on to a floured work surface and cut into 4 pieces. Roll each piece into an oval shape.
Step 5 of 5
Place the dough ovals on a lined baking tray and spoon the mushroom mix onto each, dotting goats cheese on top. Leave a border around the edges and roll up to form a crust. Brush the edges with beaten egg and bake for 10-15 minutes until golden and crisp.
