- 1 ball pizza dough
- 10grams plain flour, to dust
- 10grams semolina, for sprinkling
- 200grams mozzarella, torn into chunks
- 1 pinch freshly ground black pepper
- 4 slices Parma ham
- 1 handful wild rocket
Method
Step 1 of 3
Preheat the oven to its highest setting. Very lightly oil a baking tray and put it in the oven to get hot. They both need to be really hot before cooking the pizza.

Place the dough on a floured surface and use a rolling pin to roll it out as thin as you can - about 25-30cm in diameter. Sprinkle the hot baking tray with semolina and transfer the dough onto it.

Top the base with the mozzarella, season with lots of black pepper, then bake for 10 minutes, or until the crust and base are crispy, and the top is melted. Drape the Parma ham on top, scatter evenly with the rocket, season again with black pepper, and serve.
