  • 375grams puff pastry, ready rolled
  • 160grams blue cheese, sliced

Description

These elegant but easy leek and blue cheese tartlets make a delicious entree or light lunch served with a simple salad.

Method

Step 1 of 3

Pre-heat the oven to 200°C/180°C fan-forced. Melt the butter in a large pan and cook the leeks and thyme for 18-20 minutes, stirring occasionally, until soft. Remove the thyme sprigs and discard.

Step 2 of 3

Roll the pastry out into a thin rectangle and cut out 4 large discs using a bowl to trace. Place on a lined baking sheet, top the middle of each disc with leek filling, leaving a border around the edge.

Step 3 of 3

Add sliced blue cheese on top of the leeks and bake for 25 minutes until puffed up and golden.
