  • 1 small-to-medium eggplant
  • 1 pinch cayenne pepper
  • 1teaspoons smoked paprika
  • 1teaspoons sumac
  • 1L vegetable oil (for deep-frying)

Method

Step 1 of 3

Line 3 baking trays with paper towels. Slice eggplant very thinly into rounds. Lay on the paper towel. Sprinkle each with a little salt to draw out moisture. Set aside for 15 minutes.

Step 2 of 3

Combine spices in a small bowl. Pat eggplant dry with extra paper towel and stack onto one of the trays.

Step 3 of 3

Heat oil into a wok over medium-high heat. Fry eggplant in batches for 3 minutes, turning over until golden. Using a slotted spoon transfer to paper towel lined trays to drain. Sprinkle with spice mix. Serve immediately.
