  • 250grams wholemeal flour
  • 1teaspoons baking powder
  • 90grams natural yoghurt
  • 300grams spinach
  • 1tablespoons olive oil
  • 1 large red onion, peeled and sliced
  • 4 large portobello mushrooms, sliced
  • 3 cloves garlic, peeled and minced
  • 200grams blue cheese, vegetarian, crumbled

Description

This three ingredient, quick flatbread base will become your go to for easy pizza night.

Method

Step 1 of 4

Pre-heat the oven to 180°C/160°C fan-forced and place two baking sheets inside. For the base, whisk the flour and baking powder together in a large bowl.

Step 2 of 4

Pour the yoghurt into the bowl and add 4-5 tbs of water. Mix to form a smooth dough . Tip on to a floured surface and cut into two pieces. Roll each out into a thin 20cm round.

Step 3 of 4

Heat half the oil in a large pan on medium high heat and cook the onions for 5 minutes, add the mushrooms and garlic and cook for 5 more minutes. Add the spinach gradually, cooking until wilted.

Step 4 of 4

Place the dough on the hot baking trays, top with spinach, onion and mushroom mix and crumble over blue cheese. Bake for 12-14 minutes until the dough is golden and the cheese is lightly melted.
