Description
A Greek inspired side dish that uses tomato, onions, olive oil and herbs to make peas more appealing.
Method
Step 1 of 3
Heat up a non-stick pot to a medium heat with the canola oil. Fry the diced potatoes, shallots, carrots and thyme for 6 minutes while tossing.
Step 2 of 3
Add the water to the pot and continue to cook for a further 3 minutes to evaporate the water and cooked the potato fully.
Step 3 of 3
Add the peas and tomato puree and mix while cooking for a further 3 minutes. Remove from the heat and serve with salt and pepper to taste.
