Herb-roasted New Potatoes

- 2tablespoons olive oil
- 1kilograms new potatoes, scrubbed
- 4 cloves garlic, peeled but left whole
- 2 rosemary sprigs
- 2 thyme sprigs
- 1 sage sprig
- 1 pinch sea salt
- 1 pinch black pepper
Method
Step 1 of 3
Put the oil into a roasting tin and place in a preheated oven, 200°C for 5 minutes until hot.
Step 2 of 3
Add the potatoes, garlic cloves and herb sprigs, season well with sea salt and pepper and turn to coat in the oil.
Step 3 of 3
Return to the oven and roast for 40-45 minutes, turning occasionally, until the potatoes are crisp and tender. Serve hot.
