  • 250grams chestnut mushrooms
  • 1-2 oranges, segmented and pith removed
  • 1 bunch spring onions, sliced
  • 2 handfuls fresh spinach leaves
  • 1/3 cup extra virgin olive oil
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 pinch red chilli flakes
  • 1 handful fresh basil leaves, shredded
  • 3tablespoons cider vinegar
  • 1 pinch caster sugar
  • 1teaspoons grainy mustard

Description

This Chinese style pork belly recipe will have friends and family thinking you’ve ordered straight from the local takeaway. Juicy pork drenched in an aromatic spiced sauce makes for a winning dish.

Method

Step 1 of 3

First, make the dressing. Put the olive oil and vinegar in a jug or small bowl, and whisk until combined. Add a little of the juice reserved from segmenting the oranges for the salad, together with the caster sugar and mustard. Season with salt and black pepper, whisk again, and taste. Add a little more of the orange juice if needed. Leave the dressing to stand for a while, to allow the flavours to infuse.

To make the salad, put the mushrooms in a large bowl. Add the chilli flakes, and drizzle over a little of the dressing. Toss together. Leave to stand for 10 minutes, then add the spring onions and orange segments, and gently toss to combine.

Step 3 of 3

When ready to serve, add the spinach and basil leaves, and more of the dressing. Taste, and season again if needed. Serve immediately.
