- 1 lemon
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 150grams cooked chickpeas, peeled
- 75grams baby spinach
- 2 cloves garlic
- 1tablespoons tahini
- 1/2tablespoons chia seeds (to garnish)
- 1/2 cup microgreens (to garnish)
Method
Step 1 of 3
In a food processor, combine the chickpeas, spinach, garlic, lemon juice and zest, and tahini. Process on low for 1 minute to combine the ingredients.
Step 2 of 3
With the processor on high, drizzle in the oil. For a thinner consistency, gradually add cold water, 1 tablespoon at a time, until the desired texture is achieved. Add salt and pepper to taste.
Step 3 of 3
Transfer to a serving bowl and garnish with chia seeds, sprouts, and microgreens. Serve immediately.
