Method

Mix together 4 ripe plum tomatoes, seeded and finely diced, with 2 tbsp finely chopped red onions, 2 tbsp olive oil, 1 finely chopped garlic clove, 1 tbsp balsamic vinegar, 2 tbsp very thinly sliced basil, and salt and black pepper. Spoon on top of each crostini and garnish with 2 fresh basil leaves. For a variation,add 1 chopped, medium-ripe avocado with the tomatoes, replace the vinegar with 1 tbsp lemon juice, and use finely chopped coriander instead of basil. Garnish with coriander leaves.
