Method

Step 1 of 3

Pre-heat the oven to 160°C. In a bowl, mix the eggs with the baking powder and add the prepared vegetables to the mix.

Step 2 of 3

Pack the mix into small hand size patties and shallow fry with the olive oil for 2 minutes each side.

Step 3 of 3

Carefully remove the patties from the shallow fry, transfer to a baking tray and bake for 10 minutes.
