- 2 large parsnips
- 3 large red onion
- 2 large carrots
- 2 large red capsicums
- 1tablespoons ras el hanout
- 2tablespoons olive oil
- 400grams chopped tomatoes
- 75grams dried apricots
- 1teaspoons honey
Description
This warming and gently spiced veggie tagine is perfect for using up whatever root vegetables you have in the fridge.
Instruction tip
Top the tagine with pomegranate seeds, flaked almonds and yoghurt and serve with couscous.
Method
Step 1 of 2
Tip the vegetables, ras el hanout, olive oil, dried apricots, honey and the can of chopped tomatoes plus a can full of water into the slow cooker.
Step 2 of 2
Cook on low for 5-6 hours, stirring occasionally, until the vegetables are tender and the sauce is reduced and bubbling.
