- 500grams brussels sprouts, trimmed and chopped
- 1.50kilograms potatoes, peeled and chopped into cubes
- 2tablespoons butter
- 4 spring onions, sliced
- 1 pinch white pepper
- 1 pinch salt

Description
Swap cabbage for brussels sprouts for an Irish mash with a difference.
Method
Step 1 of 2
Cook the potatoes in a large pan of salted water for 15 minutes and drain using a slotted spoon, placing into a colander. Add the brussels sprouts to the pan and cook for 5 more minutes and drain.
Step 2 of 2
Tip the potatoes back into the pan, add the butter and mash completely. Stir the brussels sprouts and spring onions and mix well. Season with salt and pepper and top with a knob of butter, if desired.
