  • 2 cloves garlic, crushed
  • 100grams black olives, pitted
  • 1 lemon, grated zest and juice
  • 1/3 cup olive oil
  • 250grams ricotta cheese

Method

Step 1 of 3

Put the wild rocket leaves, garlic, olives, lemon zest and juice, and oil in a blender or food processor, and whiz or blend until smooth.

Step 2 of 3

Transfer the rocket and olive mixture to a bowl, add the ricotta cheese, and season with black pepper. Mix well.

Step 3 of 3

Serve with torn chunks of warm sourdough bread, thick toasted slices of baguette, or grilled flatbread.
