- 900grams floury potatoes, peeled and halved or, if large, quartered
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 2-3tablespoons warm milk
- 25grams butter

Method
Step 1 of 3
Put the potatoes in a large pan of salted water, bring to the boil, and cook on a medium heat for about 20 minutes, or until soft when pierced with the tip of a sharp knife. Drain well, then return to the pan, replace the lid, and leave on the warm but unlit hob for 5 minutes, to allow them to dry out a little.

Mash well until there are no lumps, then add the milk and mash again. If the potatoes are still a little dry, add some more milk and mash once more.
Step 3 of 3
Beat in the butter with a wooden spoon and season well with salt and black pepper. Do not overbeat the potatoes otherwise they will become gluey. You want them fluffy and lump-free.
