Description
Sage and butternut squash is the perfect flavour combination in this delicious veggie and bean bake.
Method
Step 1 of 5
Pre-heat the oven to 180°C/160°C fan-forced. Drizzle oil in a large oven proof casserole dish and cook the onions and carrots gently on a low heat for 10 minutes until soft.
Step 2 of 5
Peel butternut squash, slice both in half, scoop out the seeds. Cut each in half where the bulb meets the neck, and cut the bulb into chunks. Thinly slice the neck into half moons.

Add the garlic and half the sage, very finely chopped, to the onion and cook for 1 minute, increasing the heat to medium. Add the butternut squash cubes and cook for 8 minutes, until softened slightly.

Pour over the wine, scraping the bottom of the pan as you do, then the vegetable stock and cannellini beans. Bring to a simmer, then stir in the mustard and creme fraiche, mixing well. Finally add the arrowroot and simmer for 2-3 minutes until the sauce has thickened.

Arrange the squash slices on top of the casserole like a gratin, top with the remaining sage eaves and a drizzle of oil and bake for 40 minutes, until golden and bubbling.
