  • 170grams Continental Smashed Sensations Pumpkin & Potatoes Mash
  • 1tablespoons olive oil
  • 1 red onion, finely chopped
  • 200grams sliced Swiss brown mushrooms
  • 400grams tinned diced tomatoes
  • 400grams black beans, drained
  • 400grams red kidney beans, drained
  • 3 1/4 cups water, boiling
  • 2teaspoons margarine
  • 120milliliter sour cream (to serve)
  • 300grams green vegetables, steamed (to serve)

Method

Step 1 of 6

Preheat oven-grill to moderately high heat. Heat 2 teaspoons oil in large non-stick frying pan over medium heat. Cook onion for about 5 minutes, stirring occasionally until softened.

Add remaining oil and mushrooms and cook, stirring occasionally, for 5 minutes until softened.

Step 3 of 6

Stir in beans, tomatoes, recipe base and ½ cup boiling water. Bring to the boil, stirring. Reduce heat to medium and simmer, uncovered, for 5 minutes, stirring regularly, or until sauce has thickened.

Transfer mixture to a shallow 8-cup (2 Litre) capacity baking dish.

Place Continental Smashed Sensations Mash packet contents and margarine into a large heatproof bowl. Pour over remaining 2 ¾ cups boiling water. Stir well with fork until combined. Allow to stand for 30 seconds then stir well again until smooth.

Step 6 of 6

Top mushroom mixture with prepared mash. Grill for 8 minutes or until mash just starts to become golden brown. Serve with sour cream and steamed green vegetables.
