  • 1 clove garlic, crushed
  • 30grams butter, melted
  • 1/4 cup light sour cream
  • 1tablespoons parsley, chopped
  • 3 spring onions, chopped
  • 1kilograms sweet potatoes, peeled and diced
  • 1 pinch pepper (for seasoning)
  • 1tablespoons olive oil
  • 1/4 cup pepitas
  • 1/3 cup tasty cheese
  • 1/2 cup fresh breadcrumbs
  • 1 pinch salt (to taste)

Method

Step 1 of 6

Preheat oven to 200°C.

Step 2 of 6

Combine sweet potato, oil, garlic and spring onion in a 4-cup capacity ovenproof dish. Toss to combine.

Step 3 of 6

Bake for 30 minutes, turning occasionally, until just tender. Meanwhile, combine cheese, breadcrumbs, pepitas, parsley and butter in a medium bowl.

Step 4 of 6

Reduce oven to 180°C and remove baking dish. Roughly mash sweet potato using a fork. Stir through sour cream. Season to taste.

Step 5 of 6

Sprinkle crumb mixture evenly over. Bake for 15 minutes until topping is golden.

Step 6 of 6

Serve with roast meat.
