- 4 eggs, beaten
- 2tablespoons fresh herbs, chopped
- 1tablespoons double cream
- 1tablespoons olive oil
- 1 small red onion, finely sliced
- 1/2 red capsicum, cored, deseeded and finely sliced
- 100grams feta cheese
- 1 large handful rocket leaves
- 1 pinch salt
- 1 pinch black pepper
Method
Step 1 of 4
Beat the eggs, herbs and cream together in a bowl, and season with salt and pepper.
Step 2 of 4
Heat the oil in a nonstick frying pan with a flameproof handle, add the onion and red capsicum and cook over a medium heat for 3-4 minutes until just softened.
Step 3 of 4
Pour in the egg mixture and cook for about 3 minutes until almost set, then crumble over the feta.
Step 4 of 4
Place the pan under a preheated high grill and cook for 2-3 minutes until the top of the tortilla is golden brown. Top with the rocket and serve.
