  • 2 zucchini, thinly sliced lengthways
  • 1 lemon, zested
  • 75grams goat’s cheese, crumbled
  • 1tablespoons olive oil
  • 1/3 cup gluten-free pasta sauce
  • 1 gluten free pizza base

Method

Step 1 of 2

Heat a chargrill pan over high heat. Brush zucchini with oil and season. Chargrill for 2 minutes each side or until charred and tender.

Step 2 of 2

Spoon pasta sauce over cooked gluten-free pizza base and spread evenly with the back of a large spoon. Top with zucchini, cheese, mint and lemon zest. Serve immediately.
