  • 1/2 cup sour cream
  • 1/2 head cauliflower, cut into small florets
  • 2tablespoons coriander leaves, to serve
  • 2tablespoons lime juice
  • 1 1/2 cup fine cut coleslaw
  • 12 Stand ’n Stuff mini tortillas
  • 2tablespoons smoky chipotle seasoning
  • 1 1/2tablespoons olive oil
  • 1 corn cob, kernels removed

Method

Step 1 of 5

Preheat oven to 200°C. Line 2 baking trays with baking paper.

Step 2 of 5

Toss cauliflower and corn in a bowl with seasoning and 1 tbs oil. Spread over one tray. Bake for 20 minutes or until cauliflower edges turn golden brown and florets are tender.

Step 3 of 5

Meanwhile, arrange tortillas on second tray. Heat in oven for 5 minutes to warm through.

Step 4 of 5

Mix sour cream with 1 tbs lime juice and season to taste.

Step 5 of 5

Toss coleslaw with remaining oil and juice. Fill tortillas halfway, then top with cauliflower, corn and a little sour cream mixture. Serve topped with coriander.
