Mini Roasted Cauliflower Tortillas

- 1/2 cup sour cream
- 1/2 head cauliflower, cut into small florets
- 2tablespoons coriander leaves, to serve
- 2tablespoons lime juice
- 1 1/2 cup fine cut coleslaw
- 12 Stand ’n Stuff mini tortillas
- 2tablespoons smoky chipotle seasoning
- 1 1/2tablespoons olive oil
- 1 corn cob, kernels removed

Preheat oven to 200°C. Line 2 baking trays with baking paper.

Toss cauliflower and corn in a bowl with seasoning and 1 tbs oil. Spread over one tray. Bake for 20 minutes or until cauliflower edges turn golden brown and florets are tender.

Meanwhile, arrange tortillas on second tray. Heat in oven for 5 minutes to warm through.
Step 4 of 5
Mix sour cream with 1 tbs lime juice and season to taste.
Step 5 of 5
Toss coleslaw with remaining oil and juice. Fill tortillas halfway, then top with cauliflower, corn and a little sour cream mixture. Serve topped with coriander.
