  • 420grams chickpeas, drained and rinsed
  • 1 egg
  • 3 cloves garlic, finely grated
  • 1/2 cup panko crumbs
  • 2tablespoons parsley, finely chopped
  • 1teaspoons curry powder
  • 1/2teaspoons garam masala
  • 250grams white potato, cooked and mashed
  • 1 pinch salt
  • 4tablespoons olive oil

Description

If you’re looking for something easy and meat-free, try these curried chickpea patties. They’re great on a salad, with a dipping sauce or in a wrap.

Method

Step 1 of 6

Gather all ingredients together. Select a large frypan.

Step 2 of 6

Into a large bowl, add Chickpeas, with a fork, squish them down, whilst leaving some whole for that rustic look.

Step 3 of 6

Add all other ingredients (except the oil for the frypan), and mix well to combine.

Step 4 of 6

Roll into whatever shape or size you desire. I usually flatten mine down forming a pattie shape. My mixture makes about 11 patties. You can make these ahead of time, just cover and rest in the fridge.

Step 5 of 6

Add oil to frying pan on medium heat. Add all patties and cook on both sides for about 8 minutes (depending on size of pattie) or until nicely golden.

Step 6 of 6

Serve with either a fresh garden salad for lunch or dinner or with a dipping sauce of your choice for a delicious snack.
