- 1 small carrot, grated
- 1 long red chilli
- 1/4 cup mint leaves
- 840grams chick peas, drained
- 1 pinch pepper (for seasoning)
- 1 cup semi-dried tomatoes
- 1 egg
- 1 cup fresh breadcrumbs
- 1 pinch sea salt ground (to taste)

Method
Step 1 of 4
Combine chick peas, one cup of semi-dried tomatoes, mint leaves and chilli, deseeded and finely chopped.
Step 2 of 4
Transfer to a food processor and pulse until coarsely combined.
Step 3 of 4
Add breadcrumbs, carrot and egg.
Step 4 of 4
Season with salt and pepper. Mix and form into 4 patties. Note: You can use bought breadcrumbs to crumb foods, but if you have a food processor it's easy to make your own. Remove the crusts from day-old white bread slices and cut into cubes. Transfer the cubes to the bowl of a food processor and process until finely chopped.
