  • 400grams tin of lentils drained
  • 2 cuP cooked butternut pumpkin
  • 1/2 cup small diced onions
  • 1/2 cup small diced carrots
  • 1/2 cup small diced celery
  • 1/2 cup small diced red caPicum
  • 2tablespoons chopped fresh dill
  • 1/2 bunch fresh chopped chives
  • 2teaspoons curry powder
  • 2teaspoons vegetable stock powder
  • salt and black pepper (to taste)
  • 1teaspoons minced garlic
  • 1 cup mashed potatoes
  • 1/2 cup mashed sweet potato
  • 1teaspoons ground cumin
  • 1teaspoons chopped chilli
  • 1/4 cup sweet chilli sauce for glaze
  • 1 cup grated zucchini

A healthier loaf that's tasty for the whole family!

Method

Step 1 of 4

Stir-fry the carrots, onions and celery in a non- stick wok till cooked and softened

Step 2 of 4

Add curry powder, stock powder, cumin, garlic and chilli and lastly capsicum

Step 3 of 4

Mix through the zucchini, mashed vegetables and lentils and season to taste

Step 4 of 4

Form into a loaf and coat with sweet chilli sauce before baking in preheated oven 170C for 30 minutes. Cut into slices to serve
