- 40grams self raising flour
- 150grams tomato, cut into quarters
- 100grams snow peas, trimmed & finely chopped
- 5milliliter virgin olive oil spray
- 3tablespoons oats
- 60grams rocket
- 1/2 cup buttermilk
- 1 egg
- 1tablespoons chives
- 40grams haloumi, grated

Method
Step 1 of 3
Combine the halloumi, oats, flour and chives in a large bowl. Add the snow peas, make a well in the centre. Add the egg and buttermilk and stir until just combined.
Step 2 of 3
Heat a non-stick frying pan over a medium heat. Spray with oil spray. In batches, drop ¼ cupfuls of mixture into the pan, allowing room for spreading. Cook for 1-2 minutes, then flip and cook the other side for 1-2 minute or until the fritters are cooked through.
Step 3 of 3
Divide fritters between serving plates. Serve with the tomato and rocket.
